For Email Management Server, the build number can be found by right-clicking on the root node in the management console and choose the menu item "About..."
For Directory Assistant, D.L. Manager, the build number can be found by clicking on the service in the management console.
For Directory Mate, check the ReadMe.txt file located under the Start Menu for MADSolutions Directory Mate.
